Humus x hortense is a plant-based fine dining restaurant conceived from a desire to change the food system through the senses and with sustainability in mind.  The botanical tasting menu resonates with the rhythm of 24 micro seasons and it changes every week depending on the harvest of the wild farm "Le Monde des Mille Couleurs".

Mastercook Nicolas Decloedt strives for the highest quality of ingredients and at the same time the lowest food waste thanks to ancient conservation techniques and zero-waste cocktails.

After all these years of pioneering, the restaurant humus x hortense is awarded with a Michelin Green Star in 2020, received in 2022 the Culinary Innovators Awards by Gault & Millau and ranked in the top 10 of Best Vegetables Restaurants in the world.
