Mastercook Matthias Van Eenoo's cuisine in restaurant Brugmann is fine, innovative and seasonal. It is inspired by products on the market and revisits the classics with sleek, designer graphic lines. It is a modernized traditional cuisine in which we find certain typical dishes of gourmet French cuisine enhanced with an unexpected ingredient.

Gluttony, curiosity and intuition are the keywords of this chef, son and grandson of Belgian restaurateurs, who grew up in Provence before moving to Paris to learn in the brigades of great starred chefs.

In 2015, Matthias Van Eenoo returned to his Belgian origins by opening the gastronomic restaurant Brugmann.
