Chef Mastercook Matthias Van Eenoo's cuisine at restaurant Brugmann is refined, innovative, and seasonal. Fresh market produce, reinvented French classics with clean, graphic designer lines. It is a modernized traditional cuisine where we find certain typical dishes from French gastronomic cooking, enhanced with an unexpected ingredient.

Generosity, curiosity, and intuition are the defining qualities of this chef, son and grandson of Belgian restaurateurs, who grew up in Provence before moving to Paris to train in the kitchens of great Michelin-starred chefs.

In 2015, Matthias Van Eenoo returned to his Belgian roots by opening the gastronomic restaurant Brugmann.
