Young Master Baptiste Tieberghien works exclusively with top-quality, seasonal, and preferably local products. In 2023, Baptiste was also named 'Fish Chef of the Year'. On the roof, he grows his own herbs and edible flowers. In certain seasons, he also forages for elderflower, blackberries, or wild herbs along the banks of the Leie.
