Young Master Baptiste Tieberghien works exclusively with premium products, at their peak season and preferably sourced locally. In 2023, Baptiste was also named 'Fish Chef of the Year'. On the roof, he grows his own herbs and edible flowers. Additionally, during certain seasons he also forages for elderflower, blackberries, and wild herbs along the banks of the Leie.
