Hailing from Mechelen, the quintessential vegetable region, the overwhelming use of vegetables – some of which he grows himself – in his cooking style is simply second nature to him. Each vegetable receives a distinct, carefully crafted preparation method that best highlights its specific taste and textural qualities.
In addition, he attaches the greatest importance to sauces because of their underlying and juicy effect, invariably without cream but with extracts of vegetable or meat broths, they seem to have been plucked from the simmered cuisine, which for him is the real deal.
