The name refers to Colette Leemans, grandmother of Young Master Thijs Vervloet, who inspired him with her passion for hospitality. They proudly carry on her legacy of quality and authenticity. Young Master Thijs Vervloet perfected his craft in Paris, at 't Fornuis under Johan Segers, and at Viki Geunes in Zilte, before developing his own culinary vision.

Today, with his team, he creates dishes that honor the past, with a modern twist and an eye to the future.
